Sometimes we like breakfast for lunch. And if I am lazy and don’t have much food on hand, it’s breakfast for dinner as well:) Oh, and don’t mind Cali’s face. She was stung by a mosquito and this was the result!!!
Open Face Egg and Bagel Sandwich
Half of whole wheat bagel (I try to find a brand that contains no partially hydrogenated oils)
1 egg (enriched with omega-3)
1 wedge of Original Laughing Cow cheese
Extra sharp cheddar cheese
Salt (kosher) and pepper
1/4 tbsp butter (unsalted, Horizons organic)
Melt butter in skillet over med-high heat. Once melted and hot (about 30-45 seconds), turn heat down to medium and crack an egg over the butter. Sprinkle salt and pepper over the egg while cooking. Meanwhile, spread half (or however much to your liking) of the laughing cow cheese on the bagel. Flip the egg and cook to your liking. Place cooked egg on top of bagel. Sprinkle grated cheese on top. To heat the bagel and melt the cheese, place the bagel on top of hot stove the skillet was cooking on and cover with the still, hot skillet. Leave covered for 30 seconds. Serve and enjoy!
