Honey Almond Granola

My girls love this over yogurt, as cereal, or warm out of the oven over some vanilla ice cream. Yes, it is that good!!

2/3 c coconut oil

1 c honey

7 cups oatmeal

2 tsp Kosher salt

1/2 cup brown sugar

2 1/2 tsp almond extract

2 tsp vanilla

1/2 c flax

1/2 c unsweetened coconut flakes

1 c almonds

1 c walnuts

 

Preheat oven to 275.

Mix oil, honey, brown sugar, vanilla, almond, and salt in a small bowl with whisk.

In a large separate bowl combine oats, chopped walnuts and almonds, coconut, and ground flax. Stir.

Pour wet ingredients into oats mixture. Using hands, combine all ingredients until fully coated (about 2 minutes). Using a spoon works but hands are better.

Place precooked granola on a jelly roll pan. Cook in the oven for ten minutes. Stir. Cook for another five minutes. Stir.  Cook for another five. Take out if you like your granola sticky. Repeat if you like yours a bit more crunchy and brown.
