My girls are a hit and miss when it comes to oatmeal. Some days they devour my creations, other days they will tell me only pancakes! (favorite pancake recipe to come). I prefer making my own oatmeal vs. the packaged oatmeal, because I am able to gauge the sugar amount. But the main reason is because homemade oatmeal is OH SO GOOD!!! Try this version.
*When peaches aren’t in season, I like to use apples or bananas as replacements.
Creamy Peach and Walnut Oatmeal
1 cup water
1/2 cup rolled oats
1/4 cup warmed milk
2 tbsp walnuts, finely chopped
1 small peach, diced in large pieces
2 tsp dark or light brown sugar
1/4 tbsp unsalted butter
2 pinches of kosher salt
Honey for drizzling
Drop or two of almond extract (can use vanilla or omit this all together)
Place water, one pinch of salt and oats in a medium saucepan. Place over medium heat on stove. Stir occasionally. Once it comes to a boil, turn the heat down to med-low and pour in warmed milk. Stir to combine. Continue stirring off and on until creamy, about 3-5 minutes. Meanwhile, melt butter in skillet over medium high heat. Once melted and hot, turn heat to medium and add nuts, remaining pinch of salt, and brown sugar. Stir to coat. Cook for about 1-2 minute, then add diced peaches. Cook for an additional 2 minutes. Pour oatmeal into a bowl and top with peach-walnut mixture. Drizzle with honey and add a drop or two of almond extract.
